Is that a Lil Tex ? Looks like it cooks really good, and I am glad to meet some folks here that aint in a hurry cooking their food.
I am really interested in preserving BBQ… been looking for a way to make my leftovers keep better and was thinking one of those vacuum packing systems would do the trick (but I thought it would always need refrigeration). How long does the meat keep in a properly sealed jar ? Would it be the same for brisket or turkey ?

Yes it is a LIL TEX I love that I can fill the hopper with pellets and go to bed. Put those butts on at 6pm and didn’t take them off until noon the next day. As long as the jars stay sealed the meat or whatever you put in them will stay good for years. We had some green beans for thanksgiving that had been in a jar for at least 5 years and they were fine. The meat usually does’t make it past a year before we use it but it would be fine alot longer than that. Looks like you can cook alot more at a time than I can. If you have a pressure canner you should try canning some. Most meats take the same time to process, but if you are at a higher allitude you may have to us 15 pounds of pressure instead of 10. I got 24 pints fron those 4 butts.
Last year I started canning venison instead of getting steaks, chops, etc. for the freezer. A little garlic in the bottom of the jar and a teaspoon of canning salt per quart is all that is needed. To make a meal I just put it in a skillet with some BBQ sauce and in a couple minutes we are eating shredded BBQ venison sandwiches. My wife even likes it, and she doesn’t care much for venison. I canned two deer last year and two more this year, less some summer sausage I get made. I am a big fan of canned meat. Will have to try some pork.
What else is going on?..I bought a house…1920’s villa style on 1&1/2 acres of trees (spelt " endless firewood supply")…the land is pretty steep but the trees don’t seem to mind so i’m not bothered by that either…moving in tomorrow which is going to be a mission…the only thing its missing is an area to build a workshop…however it has a area that once dug out will be fine to built a Garage on…and i can borrow a 6 ton excavator that needs some exercise…
It has a coal range (coal cook stove and oven) with a wetback for hot water…no more big nasty power bills for me… YAY!!!

Is that water out there a fresh water lake or river? Or a salty water estuary?
From the sun this looks to be a NW or NE facing proprty? Here in the NA PNW rainforest we would replant a north slope in Red Alder. Just ordered 1500 seedlings for next Spring. Unfortunatly I’ve learned the hard way you can have either grazer critters or you can have productive trees - not both on the same plots. Cows and horses play/scratch the young trees to desruction. Goats and sheep eat the tender bud shoots, new growth and bark.
Fine with chickens, ducks and geese though.
So seems to be a decision. Milk/red meat/fur or fuel woods.

The last couple months have been full with the GF’s surgeries and her car catching on fire. Gotta love those GM leaky intakes! I finally got her another car going last night. Now I can get back to finishing my boiler; only a few hours left on it.
On a good note I did some trading and ended up with a Kohler 10cc61 10kw generator with trailer, heater, blower, air comp, dryer and a Ford vsg411 to power it. It is an old Michigan Bell unit. 1800 rpm. Plans for it are WK wood gas and add a battery bank to it.

Carl Z…no hobbits round here now…there was years ago but they found that if they added superphosphate to their drinking beer ( they found it didn’t make any difference in their bathing beer) their hobbitlings grew up to be normal sized people, then they found out that in Greece both men AND women with excess bodyhair are considered very attractive so they packed up and moved to some islands in the Agean sea and from all accounts are happy there growing Figs and Olives…and not paying their taxes, like all good Greeks do.
Steve U…the kitchen bench/cupboards and electric oven/stove are going to be replaced…i’d say they where secondhand before they were fitted by someone operating at ‘the edge of their skillset’ to put it nicely…lol they are a bit roughly done, the wireing is well done but the plumbing is a disaster…
are you familiar with using hemp fiber and plumbers paste to seal waterpipe threads? its kinda oldschool now but is my favorite method…well anyway, whoever did the kitchen used electrical tape like you would use PTFE tape not to mention the flowed tee in the drain that the dishwasher drains into is pointing up the drain pipe at bottom of sink drain plug, and there is a few other things…fortunatly the DIY butchery seems to be limited to the kitchen so isn’t too much to fix when i get time
The coal range works like a charm…i can have the hot water cylinder boiling with the draft only open about 1/8th, and its only using about 20lb of coal a day, at NZ$110 per ton thats got to be the cheapest hot water ever.
That water in front of the house is the Otago Harbour…and the house is facing pretty much dead west, its built to suit the hill not the sun lol
As for trees i have Sycamore coming out my ears because they self seed everywhere plus some BIG pines and a few medium and huge sizes Gum trees…i will planting about 300 Shining Gum (Eucalyptus nitens) trees to carry on my firewood supply…lol best firewood ever, even Oak doesn’t come close.
Lol i know about keeping livestock away from plantings…Rabbits and Hares are more of a worry for me at the moment in that respect, i have a silenced rifle but need to fit my NV sight and dial it in so i can deal with them at night…can’t do in daylight because i’m “officially” in town
